做法:洗(xǐ )净宰(zǎi )好(hǎo )鲫(jì )鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上(shàng )擦一遍,放(fàng )两(liǎng )勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火(huǒ )煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐调(diào )味即可品尝。 -
